Here are the settings to change background color and toolbar color in Microsoft Edge. → Watch Video Tutorial.
Settings Location for Changing Color of Toolbar
Click Three Dots for ‘Settings and More’ (or press Alt+F) → Settings → Appearance → Customize appearance → or Theme for more specific options for background color.
Customize Overall Background Colors
You can select from ‘system default’, light and dark modes. It will change overall appearance of Edge browser by applying colors to background of page as well as toolbar area.
Selecting a Theme to Change Background Color of Toolbar
You can select a color theme from built-in options, or you can also get other themes built by Microsoft. Selection of a theme works independent of light and dark mode and applies to toolbar area.
You can see two colors in each theme. One color applies to all inactive tabs and other color in theme applies to the one active tab where you have opened some website page.
Select and test different color themes and finalize one which is comfortable for your eyes and focus. My favorite color theme in Edge browser is mystical forest.
I prefer a theme which provides better contrast between active and inactive tabs so that I can quickly locate the active tab among a lot of opened tabs.

In your Windows computer, access settings through following navigation.

To Access the settings in Microsoft Edge mobile browser, click ‘three dots’ (…) on bottom of phone screen, then Settings → Appearance and select any option from ‘System default’, Light or Dark..
Here you can select your preferred radio button for light or dark mode.
By selecting dark mode, the background of settings page in Edge browser will become dark. To test the change, you can click three dots on top right of browser window to open settings.
